Default Cactus salad.

For those who are curious about the effect of nopales (cactus) on BG
but don't know how to prepare cactus, I've just posted a recipe for
cactus salad on A.F.D.

Also, with photos, at www.bigoven.com/recipe163258

I ate 4 oz of this along with a 6 oz serving of Dreamfield's
(Mac-N-Cheese). My 1 hr PP was 112. and the 2hr is 119.

That's lower than I expected although I also went swimming during that
period.

I'll try some nopalitos with eggs in the morning and see what happens.
