| | | Low Carb English muffins? Has anyone ever seen a low carb English muffin? I keep looking with no
luck. Also, does anyone know of low carb 'flour'? I have found some 5
gram flour tortillas.

Go to www.netrition.com. They have a low carb flour called Carbalose. My
wife uses it...usually blends it with regular flour. It has 19g of carbs
compared to around 100 in flour. They also have a low carb biscuit mix
(similar to Bisquick) called Carbquick. She can eat 1/2 of a large pizza
and her BG is still good.

A typical english muffin only as around 24g of carbs, so for most
diabetics, an english muffin with some meat on it would make a good
sandwich. |

I've never figured out what you guys call English muffins - I eat low
carb American ones regularly, using a ground almond base : ) I expect
you could make those bagel-without-a-hole shaped things (that I never
see in the shops over here!) with a low carb mix if required.
I've spent a bit of time recently researching low carb homemade
tortillas - the best recipe I've found is Dana Carpender's in 500 Low
Carb Recipes. It's a mildly complicated dry mix containing nut flour,
whey protein and gluten, that mixes up to a flour that's easy to roll
out to give fine tortillas that actually stay flexible. OTOH, if I
could source a 5g shop-bought one locally I wouldn't bother...

I haven't seen the English Muffins, but I do use La Tortilleria and
Toufayan wraps for sandwiches..........and a slice of the frozen New
York brand low-carb (6gms) Texas Garlic Toast is great for hubby when he
has an Italian-style dinner over spaghetti squash. A little treat does
wonders!! You can find that in SuperWalmart.

they are delicious. I have half a muffin and sometimes even the whole
one. They have about 15 carbs. The ones I have are whole wheat I
believe.

The closest British thing to an English muffin that I know of is a
crumpet, but it's not exactly the same. It's circular and the same on
both sides. You can split it with a fork, and the breaded interior is
kind of "holey", so butter and other goodies soak in easily. The batter
is typically not at all sweetened. It's the stereotypical base for
poached eggs and other goodies in Eggs Benedict.

I always wonder what is actually in things like that. Sometimes I can find
out the ingredients with enough drilling around web sites, but not always.
Do you have a label handy & you could just tell me what's in them?

Here in the US Thomas's was making low carb English muffins. I have not
seen them lately, so don't know if they are still beign made now that the
low carb diet fad seems to have passed. Makes it tough on us diabetics.

They're called Lite Multi Grain and I notice that they recently changed
the nutritional labeling to show they're higher carb and lower fiber
than it used to state. I believe a whole muffin is now labeled as 16
net carbs.

carb. My favorite is Juniors low carb cheesecake. It doesnt affect my
numbers and it is delicious

muffins, but now I know what to look for. I try to keep ny total carbs
down to under 25 - 30 per meal. I do snack on peanuts an awful lot,

I found them for the first time in the grocery today (after I read the
group). I bought a package, but have not opened them yet. They feel
"fluffy" through the packaging. I shall try one tomorrow, as a taste
test for DH of course. I never saw an English Muffin in the 25-30 years
I lived in UK. Guess it is REALLY an American thing. Crumpets may look
like them, but they are really different.
