Health and fitness: The wonders of heme iron

Epidemiological studies on the relationship between diet and health
indicate the presence of a correlation between the consumption of red
meat and processed and cancers of the colon, rectum, stomach,
pancreas, bladder, endometrium, ovary, prostate, breast, lung, and
cardiovascular disease, rheumatoid arthritis, type 2 diabetes and
Alzheimer's dementia.
The correlation between all these major chronic diseases with the red
meat diet is indicative of the presence in red meat, substances that
can damage biological components of the organism.
A new article will be published in Medical Hypotheses of October 2007,
entitled "The Iron Heme taken through red meat can catalyze the
oxidative damage and can act as an initiator of cancer of the colon,
breast, prostate, cardiovascular disease and other diseases ,
"analyzes the reasons why the heme iron content in red meat can be
harmful to health.
The hypothesis of this article focuses on biochemical compounds and
their dell'eme oxidative processes. The transformation of proteins
dell'eme in raw meat, during the process of preparation and digestion
of meat, it generates products that reaction with sulfur, nitrogen and
oxygen are able to catalyze reactions of oxidation; These reactions
would be able to damage lipids, proteins, genetic material and other
components of the various sitemi biological organism, and to
perpetuate a chain of oxidative reactions.
It is believed that the biochemical and tissue damage caused by free
radicals produced during these reactions catalyzed oxidative dall'eme
is similar to that produced by ionizing radiation.
Since oxidative damage is widely recognized as one of the factors that
can trigger chronic diseases, it is clear that reducing the amount of
red meat in the diet is able to break down levels of oxidative damage.
By contrast, the employment of foods like fruits and vegetables, can
increase the levels of antioxidants, especially selenium,
vitamin E,
vitamin C, Lycopene, cysteine and glutathione and various other
substances fitochimiche, all substances that can counter the negative
effects of oxidative rezioni.
