The rare sugar D-psicose may soon be found in bakery items replacing
some sucrose, the common sugar found in the sugar bowl.

Japanese scientists have recognised the antioxidant qualities of this
rare sugar and foresee a market for D-psicose as a functional food
thanks in part to it low GI.
Should the low GI excite T2 diabetics?
Not necessarily. Remember fructose has a low GI and damages various
bodily protein without giving the warning of elevated blood glucose.
