Whether following quote is correct;

"The most unrecognized symptom of NIDDM is weight gain. High insulin
levels prohibit the release of serotonin, a neurotransmitter in the
brain that informs the body to slow down eating. Without serotonin,
there is a tendency to overeat, which then leads to a spiral of
excessive sugar intake. A viscous cycle of hyper-insulinemia resulting
in insulin resistance is set up. This in turn creates a "carbohydrate
addict" whose craving for a higher sugar intake continues to increase.
The same dietary factors that cause NIDDM lead to obesity. Eating
refined carbohydrates such as sugar, or carbohydrates that easily
converts into sugar such as yam, potato, or rice, creates more glucose
than the body can handle. Excess glucose then gets stored as fat. As
diabetes sets in, so does lethargy and inactivity, contributing further
to the vicious cycle of weight gain and worsening of diabetes. "

Weight gain is not a symptom but an objective physical finding.

Depends on the personality type and whether a person has been
brainwashed to falsely believe that "hunger is bad."

Actually, it is the overeating leading to VAT that leads to the
metabolic syndrome (MetS) that subsequently progresses to type-2
diabetes. For some folks, there is not enough subcutaneous adipose
tissue stores to tip the scales to obesity before enough VAT forms to
cause pathology.

Depends on how much is eaten.

Actually, glycogen first.

Frankly, I am bit unsatisfied about that brainwashing can only be the
reason for overeating. It should also be backed by greed, previous
starvations, some pathology etc.

I think, it is first overeating desire and habit then insulin
resistance then diabetic2 with IR then MetS then to IDDM and then to
advanced diabetic complications?

Yes. How you make 2lbs common for all foods?

Yes. Probably may be maintainance of hyperglycemia first due to
decreased breakdown of energy stores as a result of more and continual
insulin's exposures.

How? As indicated in quote from medical textbook on physiology,
Excercising muscles may not need or need much lesser insulin for
glucose uptake.

Good links thanks. While restricting eating in quantity, should we
avoid outside, cooked, fried or heavy foods and snacks as these may
encourage inflammatory agents, AGEs etc.?

Can VAT be glycolipids which may encourage glyco-oxidation, free
radicals, oxidative stress and inflammatory responses?

This varies from cell to cell and person to person.

from VAT and not SAT.

May GOD continue to heal your heart by curing your diabetes, dear
neighbor Kumar whom I love unconditionally.

Prayerfully in Christ's amazing love,

Hypertriglyceridemia is a feature of metabolic syndrome (MetS) and not
the source of it.

May GOD continue to heal your heart by curing your diabetes, dear
neighbor Kumar whom I love unconditionally.
