Default Subway v. Quiznos

When I ordered Subway's Italian BMT (Sliced Genoa salami, pepperoni
and roast beef instead of ham and lettuce only), I get headaches.

But with Quiznos' Classic Italian (Salami, pepperoni, capicola, ham,
mozzarella, lettuce, without tomato, red onion, black olives, Red Wine
Vinaigrette Dressing), I'm fine.

How come?

I don't know. Does Subway use MSG as a preservative?

Do you have problems with Subway's other sandwiches?

You may be allergic to one of the ingredients. Lunch meat is notorious for
having added ingredients. Or it could be a difference with the bread.

whole wheat bread = 40 gr carb, 3 gr fiber

I have it myself occasionally with a veggie sandwich. No headaches
for me, but I'd bet that's from the additives to the meat.

I was thinking that Subway uses nitrates in their meats. Take a look
here:

BMT® MEATS: Genoa Salami: Pork, beef, salt, water, corn syrup,
dextrose, sugar, wine, sodium erythorbate, flavorings, sodium nitrate,
spices, garlic, lactic acid starter culture, sodium nitrite.
Pepperoni: Pork, beef, salt, dextrose, water, spices, corn syrup,
paprika, oleoresin of paprika, flavorings, sodium erythorbate, lactic
acid starter culture, sodium nitrite. Ham: ham (cured with water),
salt, dextrose, modified food starch (from corn), sodium phosphates,
sodium erythorbate, smoke flavoring, and sodium nitrite.

Looking at their chicken items, I see that they actually add "chicken
flavor" to their chickens. One says "chicken type flavor", whatever
that means.

Looks like Subway is off my menu.
