Again... I would advise reference to you meter... I simply cannot eat
*any* cereal, period. I might as well be eating Krispy Kremes.... the
result is the same.

Sounds really good. It's a little more complicated than I'd like but

Interesting article. I don't think I'm a wheatoholic though. I don't
eat bread or bagels or any of that other wheat stuff they listed.
Except Cream of Wheat now and then. I just like the stuff. Maybe
because it's so quick and simple to fix.

No, it is good - really good, I have to defend mine from my ravening
children! - my mix is almost exactly the same as Jackie's (no lecithin
- does that have a purpose, Jackie?) but all I do with mine is pour
hot water over the mix from the kettle I've just boiled for
tea/coffee. Then I leave it to sit whilst I'm feeding animals and
children. Only one button and one appliance Mornings are not my
thing either.... On the weekend I might mix a tablespoonful of the
same mix with an egg and a splash of water, and fry it up to make a
gorgeous pancake. The kids like that too, mutter...

Actually, "complicated" wasn't the word I was looking for. My problem
is finding that stuff. I already have the protein powder and a giant
coffee can, but I have no idea where I would find the rest of it.
Around here I had difficulty enough finding Steel Cut Oatmeal (finally
found one store in town with Quaker brand in a 24oz box for $5. And
I'm used to paying $1.92 for 42oz or the rolled stuff).
I'll keep my eyes opened though.

Lecithin is an emulsifier. The protein powder I use doesn't wet or mix
very easily, so I tend to put lecithin in everything with the protein
powder.

Lecithin has also got lots of phosphatidyl choline and is supposed to be
good for cell membranes and the brain and heart in particular. Some
places sell as an expensive supplement, but I buy it as a baking
ingredient and it's dead cheap when being sold that way.

It *is* a tad complicated to mix the stuff up (you need a BIG bowl), but
it makes 17 servings, so it's a once-a-month kind of thing.

I went to Amazon first and Almond meal was available but you had to
purchase 4 units and was pricey. Grinding Almonds into meal increases
it's potential uses. BUT and it is a big BUT smaller particle sizes
affords more oxygen contact and the potential for rancidity increases.
So it goes bad however the process can be slowed. I freeze grains.
In a place not that long ago I could purchase flours and meals that
were stored in refrigeration. Walnut Acres.

Anyone know of a place like that which ships in small batches ?

I order from King Arthur Flour, but I think you can google up other
suppliers.

I keep it in the freezer for freshness. I can't grind nuts at home
without making nut butter, because I don't have a mill.

Winn Dixie (had the Steel Cut Oatmeal)
Save a Center (didn't have it)
Choice (didn't either)
Walmart (ditto)

There may be another one or two off brand groceries that I can't think
of at the moment. But they're not likley to have anything but the
basics.
That's about it close by.

I have it down to 5 mins, and I grind my own nuts and flaxseed : ) I
do enough for a week or so, and if I overestimate the excess goes in
the freezer.
