best "light" salad dressings?

I don't like fatfree dressing - all too sweet or too tart. I like to
use either really good quality extra virgin olive oil, or one of my new
found favs form TJs (of course) is walnut oil. We need those beneficial
fats in our diet anyway.

My favorite salad these days is: Walnut oil (1/3) mixed with rice wine
vinegar (1/3) and chicken stock (1/3) and 1/2 teas. sugar or honey.
Toss with fresh spinach, toasted walnuts, dried cranberries, and
mandarin segments. Drop small pieces of goat cheese on top. Yummmm.....

My favorite store bought is probably Newman's Own Sesame Ginger. DH
loves the Newman's Own Lighten Up Honey Mustard. I also like the Kraft
Zesty Italian Free and the Kraft Light Done Right Cucumber Ranch.

Why bother. I don't do alot of salad dressing, so I'd rather have
something with great flavor and enjoy it than something that tastes crappy.

My favs are
poppy seed
sweet onion
rasberry vinegrette
and the home made orange cream that I get from my fav restaurant near
work...
