Default ground beef recipes?

Ugh! I am sick to death of ground beef. Not that we eat it that often, but
when we do, it's always so bland. And guess what's thawing for dinner?
What the heck can I do with it that won't be horribly fattening but
relatively tasty?

Something we like -- though we use ground turkey -- is to mix some
browned meat with spaghetti sauce (bottled, from the grocery) and serve
it atop spaghetti squash. The idea is to use lots of the squash and
not so much meat and sauce. It's very tasty; we actually prefer it to
pasta.

Something DH does occasionally is to brown up a bit of ground meat with
some onion and spices, and serve it atop a baked sweet potato. Sounds
weird, but it's good :-). You can use unusual spices here, like
cinnamon and/or curry.

Or make chili, with lots of beans relative to the quantity of meat.
You can add lots of spices so it won't be bland :-).

The basic idea in all these is to cut calories by not just eating
ground beef, but instead using it to add flavor to a dish with other
healthier ingredients.

I like a simple chili. In a big skillet, saute a pound of ground beef with
a diced onion, some garlic, and a diced, red or green bell pepper -- and a
fresh jalepeno if you have one. Drain off the fat. Add a teaspoon or so of
chili powder (or a tablespoon of the milder, pre-mixed chili concoctions
like the "Mexene" brand), a teaspoon of salt, and half teaspoon of powdered
cocoa (optional). Throw in either (1) a can of kidney beans and a little
can of tomato sauce or (2) a can of pork & beans. Heat through. Serve with
salad and saltines (I have recently discovered whole grain saltines and I
love 'em -- never did like regular saltines).

Can you get Dale's sauce where you live? It's in a bottle, on the shelf
with the BBQ sauces. It's mostly soy sauce and garlic. Mix some Dale's and
some finely diced onions up in your ground beef, shape into patties, then
grill them over a HOT fire or broil.

Mix 1 tablespoon each garlic powder (not salt), onion powder, black pepper,
oregano, thyme, paprika and, if you can stand it, cayenne, otherwise reduce
the cayenne to 1 or 2 tsps. Mix into the meat. I garontee it won't be
bland.

Ok, I've heard of most of that stuff, but what is a hawaiin or porcupine
meatball?

Hawaiin are sweat/sour type meatballs made in a sauce with pinapples and
things like green peppers.

Porcupine balls are mixed with rice, making the porcupine look (rice
sticking out of balls) Could be "hairy balls" but I don't think that would
be very appetizing.

Eat it plain. Almost all the other ground beef recipes include strong
spices or gravy so ground chicken or ground turkey easily substitutes.

Form the ground beef into a patty, add a little McCormick or Mrs. Dash
extra spicy seasoning and grill it. Serve it inside a whole wheat bun
with lettuce and tomato. If you're carb conscious, cube up the cooked
burger, add chopped lettuce and sliced or diced tomato, condiments and
wrap it up in a whole wheat tortilla.

Except for meatloaf and burgers the rest are just as good but healthier
with ground turkey or ground chicken, IMO.

Really? I never knew that. <sarcasm mode off>

Just about every time someone mentions a particular food someone always
has to chime in with how bad it is, blah, blah.

Some people who lose weight and eat healthy still have an occasional
burger or something similar. Whether it's due to economics or they just
enjoy the taste, it happens and they don't need to be told about it.

Or maybe you and your pal could get something resembling a life instead of
harassing strangers in a newsgroup. What happened that made you so
miserable you feel the need to put down others today?

Healthy, well-adjusted people don't go around trolling newsgroups.

Wow, last time I heard those I fell off my dinosaur. Then again I'm also

I don't troll this newsgroup, I've been a regular participant in order to
help maintain my weight loss. You came from nowhere and started making
ASSumptions as if you had something to prove. So regardless of who pissed

you nothing but a troll, plain and simple.

I personally find most ground beef repulsive. If it was simply the lean
cuts of beef ground up, that would be one thing. But what the hell is
really in ground beef? I mean, there's all these little pieces of white....
is it fat? gristle? intestines? Who knows, but it's gross.

The thing is, my family gets sick of the ground turkey, and prefer ground
beef. I don't, but it's not just about me. I'm considering buying a
grinder and doing my own ground beef...

A food processor works too. I grind my own turkey, chicken, and beef.

Speaking of beef and stomach...

I'll have some beef this week and continue to have a flat stomach,

Yep, thanks. I was typing too fast with a hand in a brace (sprain). I see
that z for s ridiculousness every day from middle school kids. Makes me

I see Karen, AKA the K-troll, formerly of
rec.music.classical.recordings, has returned to the Internet. On RMCR
she posed as a music lover while promoting all sorts of crap as
"classical" music. She later followed me to The Correspondence Chess
Message Board and tried to troll there, but she left after all her
posts were deleted.

I remember p*ssing her off royally by adding the following comments to
my signature line. Should I do so again?

"I'd hate to imagine a recording session in Karen's bedroom. All the
cries of "Oh Sony Sony Sony"......

"Really? I would have imagined the recordist(s) couldn't hear her
voice, her face being pressed into a pillow and all."

Just killfile her... everyone here of any consequence will either ignore
her or killfile her, and by doing that she doesn't exist anymore.

Agreed. But I felt the history lesson was in order.

There are people like her all over the internet. Nothing new under the
sun.

Eh. No offense, but I don't really put much stock into what one
person says about another person on the internet. If someone is
spouting such nonsense that I feel they are worth dismissing, then I
will do so. I'm an adult, I can make the call myself. People get into
petty little usenet feuds with each other all the time. Claims and
counter claims of being a troll will fly. But if someone really is a
troll, they will out themselves soon enough.

That depends - I struggle finding ground turkey or chicken around here.
Usually when I do find ground turkey, the fat content is higher than the
lean ground beef I generally buy.

Personally, I like the flavor of beef anyway. Although we don't eat it
often around our house. Its nice to have every so often.

Make a Joe's special - brown the beef and drain off the fat. Add
sliced mushrooms, garlic and onions, saute. Add two lightly beaten
eggs and a bunch of spinach, roughly chopped, and cook until they're
done. High protein, low carbs.

You'll get better response on recipes if you ask on the cooking news
groups. Try
