Default melted cheese in pizza

Hello all,
We make vegetarian pita pizza at home and use part-skim mozzarella
cheese. Still though, I keep wondering how the thickened
cheese (after melting) could be good for you?

Are there any studies or thoughts on whether part-skim
mozzarella cheese (melted) is indeed good for you?

There is not difference in nutrition whether melted or solid.

Dairy is near the top on lists of common food intolerances. So
exactly who the "you" is matters. Some people know they are
dairy intolerant (lactose intolerance is far more common than
most think and mild reactions to the proteins in dairy are as well).

Some people already know they are dairy intolerant. For them
no it's not good for you.

Some people have never tried a week or two dairy-free so they
might think they have no problems with dairy but they don't
actually know. It's well worth trying it at some point. Years
ago I had no idea I was wheat intolerant and when I tried a
couple of weeks wheat-free several details of my health improved.

Anyone who has tried a week or two dairy-free and had no ill
effects, they know it isn't bad for them.

It is possible to make a difference exist, though I've never heard
of anyone bothering doing it with cheese - Ghee is clarified
butter. Heat is used to separate the protein and the fat. A
similar draining process could be done on cheese by anyone
willing to put in the effort to do it. It's far more common to have
the fat separated before making into cheese - the skimming.
