Chicken Pot Pie - favorite
1 cup Onions, chopped
1 cup Celery, chopped
1 cup Carrots, chopped
1/3 cup Butter, melted
1/2 cup flour
2 cups Chicken broth
1 cup Evaporated milk
4 cups Chicken, cooked and chopped
1 cup Frozen peas
1 1/2 tsp Salt
1/4 tsp Pepper
4 Pie crusts (we make WW)
1 Saute onions, celery and carrots in butter until tender. Add flour
and stir until smooth. Cook one minute, stirring constantly. Add
chicken broth and evaporated milk. Cook, stirring constantly, until
thick and bubbly. Stir in chicken, peas, salt, and pepper.
2 Fill pie crust, top with other pie crust. Bake uncovered at 350° for
30 minutes. Then cover with foil and bake another 30 minutes.
