Given the lack of photographs of such people, the simplest explanation is
the use of large colored soft contact lenses. Even in the days of Star Trek
(the original series) the captain's friend Gary had silver eyes after they
tried to exit the galaxy. A simple Hollywood trick....

I once knew a young woman who had grey eyes. That is, the irises of her
eyes were a very light grey. It was very unnerving to look into her eyes.
