Default Made some Apple Cinnamon Muffins this afternoon ...

.... just before heading out the door for a dental cleaning.

They're good! I didn't bother with the topping tho ... tried to keep
'em a bit healthy! :-) The kitchen smelled great ... and it was good
way to use up some elderly apples.

Easy Apple Cinnamon Muffins

Prep Time: 20 Minutes
Cook Time: 25 Minutes Ready In: 45 Minutes
Yields: 6 servings

INGREDIENTS:1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/3 cup vegetable oil 1 egg
1/3 cup milk
2 apples - peeled, cored and chopped

Topping
1/2 cup white sugar
1/3 cup all-purpose flour
1/2 cup butter, cubed
1 1/2 teaspoons ground cinnamon

DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups
or line with paper muffin liners.

2. Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and
1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon
batter into prepared muffin cups, filling to the top of the cup.

3. In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter
and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over
unbaked muffins.

4. Bake in preheated oven for 20 to 25 minutes, until a toothpick
inserted into center of a muffin comes out clean.

Cheers and Hugs,
Marvin

PS -- A person smoking was leaving the dentist's office just as I was
heading in ... must be horrid to be a hygenist and have to work on a
smokers mouth. Ugh ...

--
I don't smoke. I smell like muffins. Life is Good.

Hi Marvin,

It so much fun "watching" you do it that it was good enough as it was.

Marvin! I think you need to have your own cooking show! Your recipes
are delightful and your upbeat way of talking about food makes my
mouth water and I'm sure I'm NOT the only one!

Damn it, Marv. My New Year's resolution was to not gain any more
weight (notice there's nothing about actually *losing* weight which I
really need to do). Now, one thing I did was buy 3 apples to eat.
They're sitting on the counter. Uneaten after 3 days. Your recipe
looks like a lot better way (taste wise) to eat them than just plain,
well, eating them. <sigh>
