Default OT -- Cowboy Mashed Potatoes ...

Bonjour eh

Going to give these a whirl for dinner ... reviews are all good.

Cowboy Mashed Potatoes
Prep Time: 20 Minutes
Cook Time: 20 Minutes
Ready In: 40 Minutes
Yields: 10 servings

INGREDIENTS:
1 pound red potatoes
1 pound Yukon Gold (yellow) potatoes
1 fresh jalapeno pepper, sliced
12 ounces baby carrots
4 cloves garlic
1 (10 ounce) package frozen white corn, thawed
1/4 cup butter
1/2 cup shredded Cheddar cheese
salt and pepper to taste

DIRECTIONS:
1. Place red potatoes, yellow potatoes, jalapeno pepper, carrots and
garlic cloves in a large pot. Cover with water, and bring to a boil over
high heat. Cook 15 to 20 minutes, or until potatoes are tender. Drain
water from pot.
2. Stir in corn and butter. Mash the mixture with a potato masher until
butter is melted and potatoes have reached desired consistency. Mix in
cheese, salt, and pepper. Serve hot.

Oh God, that sounds sooo good (except for the jalapeno as I'm a bit
delicate). My GMF is not a cheese man, damn it. Oughta get rid of
him for it. ;o)

I liked 'em! My kids ate them :-)

They had a nice texture considering there wasn't any milk added and not
a lot of butter. I had cut back a little on the jalapeno and garlic
because of the kids, but next time I'll put in the full amount ... so I
will be making them again fer shure.

Also it made just enough for the four of us without any leftovers.
