spot a fresh mango, and look in the fridge. We have orange juice. I
also see
a small bag of slivered almonds that I'd toasted for something else a
few
days ago. An idea takes shape...
I sautŽ the shrimp in a non-stick skillet in a little olive oil and
butter,
add the chopped garlic, season with black pepper, lemon zest, and the
juice
of half a lemon.
Once the shrimp are done on one side, I turn them, and cook them
nearly
through on the other side. I add another squeeze of lemon juice and a
splash of orange juice to increase the sweetness and to increase the
liquid
content a tad. Taste, add a bit of salt...
I place a lid over it and turn the heat down to let it all steam and
finish.
I put a bag of baby spinach in a serving bowl, and pour the shrimp
mixture
over it, tossing it with a pair of tongs until the spinach is just
wilted
and it's all mixed together well. Garnish with the diced mango and
slivered
almonds.
The rice is done, and is served on the side.
