Hi Marvin, nothing to do with your song, "knocking back" aiui sort of
deflating the dough to let it rise again. I normally knead it a bit to get
the gas out but some people seem to just slap it or something. What is the
technique and is it good practice?

I just gently push it back down. No knead for violence.
I've found the kinder I am to the dough, the better the oven-spring.

Right you are. next question. I have bought what I took to be flour - it's a
sort of bread making blend for what we call 'Granary' eg malted chewy with
some grains and flakes in it, anyway it contains ascorbic acid. What is that
for? just flavour?

I thought it was used as a preservative, and I was correct, but here's
some more info ...

Creates an acidic environment for the yeast which helps it work
better. It also acts as a preservative & deters mold and bacterial
growth. With just a touch of ascorbic acid, your Artisan breads, the
yeast will work longer and faster. French bakers add it to their
French bread, baguette or boule recipe.

Heh -- I hear ya.
We're just finishing up week 2 in the learning curve of life as a
diabetic. I've learned more about what I'm eating in the past 7 days
then I've bothered to learn my entire life. We go by the Canadian
Food Guide as far as proportions, plus measure the carbs.
I'm eating healthier now and am more aware of what I am eating then I
ever was.
It's all good.
