Default Is lots of white rice OK?

I'm eating about 3lb of white rice per day with a whole chicken / tuna and
I'm gaining loads of muscle once again (hit a plateau for awhile). its white
rice! not brown! not for Atkins dieters. Anything wrong with this? Anybody
else here eating white rice in those quantities (or more)? Know of any
famous bodybuilders who eat buckets full of white rice? Is it bad for
diabetes?

Dorian Yates and Ron Coleman loved the stuff.

Brown rice is better to prevent it. Really.

I was eating Minute rice for awhile but then I heard its bad in terms of GI
load?

This evening I went to Safeway and bought 6 different kinds of rice: wild
rice, long brown rice, Basmati rice (thanks Stephan), white Jasmine rice,
long grain white rice, and short grain rice (all bulk). I wrote down the
carbs and protein listed on each.

So far I have concluded that wild rice is horrible shit. even with chicken
bouillon. That bag of crap is out in the garbage bin.

I'm sorry for you...

Wild rice is delicious and high in fiber with a nice, pleasant nutty
flavor.

You just have to know how to cook it.

Seriously.

Here is some rice (brown mixed with red and wild rice) that I did in the
pressure cooker using home made poultry stock. The stock is made with
chicken parts, garlic, onion, celery, bay leaf and fresh grated ginger,
then strained. I make stock ahead of time and freeze it.

In fact, I have some roasted duck stock thawing on the stove right now
(duck parts and bones left over from Christmas dinner) to make rice to
go with the roast beef I am doing tonight. (pics to follow later if
anyone is interested):

Pressure cookers are your friend once you learn how to use one!
Lynn swears by the one I gave her for beans, rice and tough cuts of
meat. Funny too, she was here the day that I managed to blow a safety
valve for the first time in my life... I overfilled the damned thing
doing some black soybeans. She helped me clean up the kitchen.

Cleanest it had been in months. <G> I had to move the stove out from the
wall to clean the wall and the floor under it, as well as taking apart
the stove hood!

Even after that, she still was willing to accept my gift of a pressure
cooker. After all, she'd seen the worst that could happen! And it was my
fault...

Honestly dude, red and black rices go best mixed with plain brown. While
they are good by themselves, I think that mixing them works better for
texture etc. And never cook in water. Bullion cubes are a poor
substitute for real stock. Too salty and the texture is wrong.

Don't give up on it so soon.

I've never been impressed with plain white rice cooked in water. It has
no flavor by itself. :-P Add herbals and maybe.......

The main problem with wild rice is the cooking time. You can NOT cook
wild and white rice together! The cooking times are far too different.
Cooking wild with brown rice works just fine.

If you want to mix wild and white, you have to cook them separately,
then re-mix when they are done.

cooked rice.

Listen to this fellow - he knows wherefrom he speaks. I live in Houston
(the defacto rice capital of (or is it capitol?-ping Curt) of Texas and
grew up loving the stuff...from the fluffy to the so boiled you serve it
up like ice cream at scout camp. All rice is good.

Thanks. :-)

Recipes are actually on topic here too. Nutrition is as much a part of
body building as gym time.

IMHO Rice is a valuable addition to any diet.

Thanks for the info Omelet.. I'll try it with real chicken broth in a
pressure cooker. The stock cubes were way too salty. And I'm sure I cooked
the rice wrong. Your picture of the wild rice looks OK while mine was mushy
and, I guess it was overcooked. Will try again.. thanks!

Good luck!

Pressure time for wild rice is 20 to 25 minutes.

And keep the proportions at 2 parts stock to one part rice.

I also ALWAYS use the trivet in the bottom of the pressure cooker to
keep it from scorching. I removed the legs from a stainless steel Iris
steamer. I end up with a little excess liquid but I remove the trivet
after it's done, and mix that liquid back in then let it rest for about
1/2 hour before eating it. The rice absorbs the rest of the liquid at
that point.

Nothing wrong with making a healthy diet tasty! :-)
