Menudo is a hot dish, made with cow tripe and either calf or pigs feet
and Hominy (limed corn).

Oh I love chicken gizzards but a chicken weighs maybe 3 to 7 lbs.
An emu weighs about 130 lbs. <g> You have to slice the gizzard up to
cook it!

I think you'd like it. It has a very unique flavor and texture. Kinda
creamy.

I prefer calves to pigs feet. The flavor is milder and less harsh.
I still eat pigs feet tho'. Many people won't. It's very good for you as
it's a good source of collegen. That is good for the joints.
