BELMONT HOTEL, LOKALPEDIA RAISE AWARENESS ON PH INGREDIENTS

FOUR-star airport hotel Belmont Hotel Manila and local ingredients archive Lokalpedia join the celebration of Filipino food in their shared commitment to preserve its heritage.

Pamana is a weekend dinner buffet collaboration by Belmont Hotel Manila and Lokalpedia founder John Sherwin Felix at the hotel's Café Belmont restaurant, highlighting overlooked and rarely used local ingredients.

Felix was raised in San Jose, Occidental Mindoro, by a mother who loved cooking and using fresh ingredients. This attention to food and her innovativeness was instilled in Felix and stirred his curiosity for local food.

Felix's online archive caught the attention of many back in 2021 when his feature on the endangered salt from Bohol, the Asin Tibuok, went viral and consequently helped revive the industry.

For Pamana, Felix collaborated with Belmont Hotel Manila's Executive Chef Andrew Ko to execute a buffet menu that uses the very ingredients he has long been profiling.

Some of the culinary gems of the Pamana buffet include Kansi (sour soup made of beef shanks), Kinilaw na Tuna with Gamet (marine algae), Bringhe (Filipino version of paella), Balbacua (beef stew), Pansit Buko (coconut noodles) and Asian Tubuok ice cream (salted caramel ice cream).

The Pamana dinner buffet will be available at Belmont Hotel Manila's Café Belmont every Friday and Saturday of April and May from 6:30 p.m. to 9:30 p.m. For more information and reservations, please email [email protected].
